These Eclairs actually is my youngest sister favourite ,but becos previously can't get the right texture so have been trying making these Eclairs many time.So yesterday try baking these and to my surprise I manage to get the right texture that my youngest sister acutally looking for .I am very happy that I did not disappoint her this time.Here all the credit goes to Auntie Irene, becos without her scolding and nagging I will not be able to bake by now and also without her I will never know that I actually can do so many things.So Margaret and all over there, I know that most of them also get alot of scolding and naking for her, but believe me that one day all of you will know that you actually gain alot for her.

Your Eclairs look great. I think it must be very nice. By the way, may I know making Eclairs the method is it the same as puff (eg. durian puff, cream puff)?

Eileen, the method is the same, it is just that eclair the texture is a bit hard as for cream puff is soft,so for eclairs need to bake slight longer time in order to have the texture.

By the way I agreed with Joanne, once auntie irene said aiyo why like that, I'll become very anxious the more I try to make it right the worse it becomes kekeke, but I have learned alot alot alot from auntie irene from don't know how to bake until now at least something come out edible hahhahha.But I know I have a long way to go.signhhhh...

yeah, I think learning from mistakes or the hard way, one will remember better...we all know auntie Irene is very eagar to impart her knowledge and skills to us, plus she is a perfectionist...so we just have to follow in order to improve our standards...I agree that sometimes when we err we tend to be very 慌张，以至弄巧反拙，不过被骂后，就会根深蒂固的锁在脑袋里，希望下次不会重犯...

Mabel, I agreed with you,ever since I know Auntie Irene, indeed learn alot from her ,from a lady with no knowledge of baking become can bake,cook and can even read recipe and understand it.The most important is that now I can bake a proper birthday cake for my family and friends very very happy.
